Since the days of ancient Rome, these timeless terracotta dishes have been a kitchen necessity. When archaeologists conduct excavations on Roman-era sites in Spain, fragments of cazuelas are a sure sign of a domestic (home) site and can tell us much about the early origins of Spain’s culinary traditions.

Here are a few notes about cooking in your cazuela: Prior to baking or stove-top cooking, it is necessary soak your dishes in water for at least two hours to help remove any labels and “season” the dish, after which your cazuela will be ready for the oven or stove. It is always wise to apply gradual heat when cooking with terracotta to avoid breakage.
