Bonito Tuna Every year, the Bonito del Notre tuna migrate north to the Bay of Biscany to feast and fatten up during the summer months. When they are at their top weight, fishermen harvest them in a traditional fashion, with rods and live bait. Not only is this humane, but it safeguards the quality of the meat. Within 24 hours, the tuna are cooked in seawater and packed by hand in olive oil. The result is an exquisitely tender and silky canned tuna, unlike any in the world. |
