The Largueta is a favorite Spanish almond of ours. A slender cousin of the celebrated Marcona almond, the Largueta is much crunchier and lower in fat. Esther Tusal's almonds are the ultimate in old style Spanish quality. In London her sugar glazed Largueta almonds earned the coveted GREAT TASTE AWARDS: 2006 Bronze Award.
Our friend Esther roasts these thin, crunchy beauties, and then lightly seasons the Largueta almonds with sea salt. Pure and simple.
Tusal pan toasted almonds are different because Esther uses fresh locally grown Largueta almonds and extra virgin olive oil. She sautés small batches of the long slender Largueta almonds by hand, and then sprinkles them with a pinch of seas salt.
