Because this fresh Villegas La Mancha sheep's milk cheese has only aged for about two weeks, it is smooth, buttery, and bone white in color. Its texture is somewhat similar to goat's milk cheese, although its flavor is much richer. Because this fresh Villegas La Mancha sheep's milk cheese has only aged for about two weeks, it is smooth, buttery, and bone white in color. Its texture is somewhat similar to goat's milk cheese, although its flavor is much richer. When you sample the first slice of this young cheese you will recognize that this is truly an artisan product made by hand. It is one of our favorites!

We choose it for everyday eating at breakfast with fruit. You can also serve slices or wedges of this pleasant cheese as tapas or snacks with olives, accompanied by sherry, beer or sangria. We serve it as a light dessert accompanied by traditional membrillo (quince preserve), fig or date wheels, fresh fruit or honey.

The milk used to make this wonderful cheese is identical to that used in all of the other Villajos prize winning Manchego cheeses. The only difference is that it was removed from curing after only 10-15 days! For this reason the Villegas is too young to earn the official D.O. Manchego designation.

The Villegas pasteurized fresh sheep's milk cheese is a part of a remarkable family of cheeses that are produced in a remote village in La Mancha. The cheeses are made in a small facility that originally was the Villajos family home, following traditional methods! They use pure fresh ewe's milk from the unique Manchega breed of sheep that graze on the pastures surrounding the village.

The Villajos family has created an extraordinary line of cheeses due to cheese making skills of Beni, their master cheese maker. He draws from the experience of generations past, and makes a limited amount, allowing him to pay meticulous attention to detail.

Their flagship cheese has been awarded four Gran Selección prizes in 2002, 2003, 2005 and 2006 by the regional Government of Castilla--La Mancha. It is a hitherto unheard of accomplishment.

Fromage au lait de brebis pasteurisé

Quand vous gouterez votre première tranche du fromage au lait de brebis Villegas La Mancha, vous vous rendrez compte qu'il s'agit d'un vrai produit artisanal. C'est d'ailleurs un de nos préférés.

Parceque ce fromage frais a environ 2 semaines de maturité, il est moëlleux et facile á beurrer, et d'un blanc d'ivoire. Sa texture est proche de clle d'un fromage de chèvre, mais son goût est plus riche.

Le lait utilisé pour produire ce merveilleux fromage est le même que pour tous les Villajos, primés par l'appellation de fromages Manchego. La seule différence est qu'il n'est mis á affiner que 10 ou 15 jours. C'est pourquoi le Villegas est trop jeune pour porter l'appellation officielle de fromage Manchego.

Nous en mangeons tous les jours au petit-déjeûner avec des fruits. Vous pouvez aussi le servir en tranches comme tapas ou amuse-gueules avec des olives noires, le tout accompagné d'un Xér`s, de bière ou de sangria. Il peut aussi se servir comme déssert léger avec des rondelles de coing, de figues ou de dattes, ou des fruits frais et du miel.

Le fromage frais au lait de brebis Villegas est membre d'une remarquable famille de fromages produits dans un petit village isolé de La Mancha. Ils sont élaborés dans une humble installation agricole qui était á l'origine la demeure familiale des Villajos, et suivants les méthodes traditionnelles. Pour ce faire, on utilise le lait cru et frais de la seule race de brebis Manchega qui paît dans les pâturages aux alentours du village.

La famille Villajos á créé une fantastique ligne de fromages grâce au savoir-faire de Beni, leur maître-fromager. Il travaille en utilisant l'expérience des générations passées et produit une quantité limitée de fromages, ce qui lui permet de prèter toute son attention aux détails. leur produit phare a été récompensé par 4 prix Grande Sélection en 2002, 2002, 2005 et 2006 par le Gouvernement Régional de Castilla-La Mancha.

Il s'agit d'une reconnaissance inédite jusqu'á présent.
