Arguably the best Manchego sheep's milk cheese in Spain. It is churned by hand and then set aside to age for about 3 months. Villajos manchego has a hint of sharpness - somewhat like a Parmigiano cheese in texture – and becomes firm due to its substantial aging.

This farm made cheese has a deep, rich flavor that an industrial cheese cannot approximate. Just as there are hundreds of "cheddar" cheeses on the market, so there are dozens of commercial Manchego cheeses which do not measure up.

The cheese is made with raw milk from the venerable Manchega breed of sheep, which are tended by shepherds in the hills surrounding the village. The fresh milk from the ewes is collected in milking pails and immediately refrigerated, so as to preserve its natural aroma and taste. (more info)

Although the process of producing raw milk cheese is more complicated, Beni, the master cheese maker at Villajos, knows that this extra effort will be amply rewarded. The result will be a cheese with an unparalleled taste, full of subtle tones -- far superior to that of the industrial cheeses that are made with pasteurized milk.

The family has been fashioning this exquisite Manchego for ten years. Despite its somewhat recent arrival in the cheese marketplace, the beautifully crafted Villajos "semi-curado" earned the Gran Selección Silver Medal for Manchego in 2005.

Amazingly, Villajos cheeses have been awarded four Gran Selección prizes in 2002, 2003, 2005 and 2006. The Gran Selección is an annual agricultural food competition held by the regional Government of Castilla-La Mancha - where the company is based.

Traditionally, manchego is cut in wedges and served with olives and thin slices of Serrano ham or membrillo quince preserve. It is a classic flavor of Spain. Their entire production process is supervised by the Council of the Denomination of Origin of Manchego Cheese.

Fromage au lait de brebis Premium
-6 mois d'àge, fromage intense de demi-maturité

Nous pouvons affirmer qu'il s'agit du meilleur Manchego au lait de brebis en Espagne. Il est bartté á la main puis préparé pour s'affiner pendant environ 6 mois. Le Villajos de La Mancha est agréablement âcre et assez ferme du fait de sa considérable maturité. Ce fromage produit en exploitation agricole offre un goût profond et intense qu'un fromage produit industriellement ne peut atteindre.

Ce fromage est fait á base de lait cru de la vénérable race de brebis de La Mancha, dont prennent soin les pasteurs dans los collines au alentours du villages. Le lait frais est tiré dans des seaux á lait et directement mis au frais pour en préserver l'arôme et la saveur naturels. Le Manchego est traditionellement coupé en morceaux et se sert avec de fines tranches de jambon Serrano et des olives, ou bien avec des coings. Un petit vin jeune et fruité l'accompagnera harmonieusement.

Bien que le processus de fabrication du fromage au lait cru soit plus compliqué, Beni, le maître fromager de Villajos, sait qu'il s'agit d'un effort additionnel qui se vera amplement récompensé: le résultat est un fromage au goût sans pareil plein de subtilités, superieur et de loin aux fromages industriels au lait pasteurisé.

La Famille Villajos fabrique cet exquis Manchego depuis 10 ans, et bien que son arrivée soit relativement récente sur le marché du fromage, le Villajos "semi-curado", extraordinairement artisanal, a gagné la Médaille d'Argent des Manchego Grande Sélection en 2005.
La Grande Sélection est un concours annuel d'alimentation agricole organisé par le Gouvernement Régional de Castilla-La Mancha. Le processus de fabrication est entièrement supervisé par le Conseil d'Appellation d'Origine du Fromage Manchego.
